Mokra, kada se masno tkivo topi u klju\u010daloj vodi, a mast se skuplja na povr\u0161ini i suvi, kada se masno tkivo topi pr\u017eenjem, a od ostatka dobijamo \u010dvarke.<\/p>\n<p>Otopljena mast se pro\u010di\u0161\u0107ava kroz sito i hladi, a od brzine hla\u0111enja zavisi njena tekstura.<\/p>\n<p>Osnovni sastav i kvalitet:\u00a0Od dela masnog tkiva i, \u0161to je jo\u0161 va\u017enije, od na\u010dina ishrane svinje, zaivsi i kvalitet masti.<\/p>\n<p>Svinjska mast sadr\u017ei 40 odsto zasi\u0107enih masnih kiselina (najzastupljenije su stearinska i palmitinska), 50 odsto mononezasi\u0107enih masnih kiselina i 10 odsto polinezasi\u0107enih masnih kiselina. Postoji vi\u0161e od 1.000 razli\u010ditih sorti maslina od kojih se dobija ulje.<\/p>\n<p><strong>Osnovni sastav i kvalitet:<\/strong>\u00a0Maslinovo ulje ima visok sadr\u017eaj nezasi\u0107enih masnih kiselina s naglaskom na oleinsku masnu kiselinu, a polifenoli poput oleuropeina daju mu karakteristi\u010dnu gor\u010dinu.
